材料,
300克肥瘦肉或五花肉冻一下后切丝
6片姜切末(去腥中和肉香)
韭菜洗净切4厘米段,梗叶分开,需半小时晾干(蔬菜晾干才容易入味,猪油和植物油混合的汤汁是灵魂)
作法,
凉油热勺炒肉丝变白放姜末料酒少量酱油(10克)大火炒4下
放入韭菜梗炒几下(翻两三个个),放入韭菜叶,炒几下放入少许盐再炒几下,至绿透或八九成熟出锅
要点,大火快炒韭菜不出汁
