材料,
3根细茄子头扳掉,一切两段再竖切为一半对一半
香菜1把去黄叶洗净切小米粒大小碎末装碗里
蒜要多切细末放入同一个碗
作法,
切成粗条皮朝上蒸8分钟未变色至筷子可捅穿,冷却茄子至手摸不烫,放入冰箱镇上2小时
加2克盐,少量味精,可选少量蚝油提鲜, 1大勺生抽,1大勺老陈醋(酸度不够可加1勺九度米醋),做成凉拌汁
手撕茄子成条加凉拌汁搅拌
