完美煎牛排

材料,

  • 一块350克西冷牛排(sirloin steak, 上腰部的脊肉)
  • 30克原味黄油
  • 2瓣大蒜
  • 3把rosemary
  • 盐和黑胡椒

作法,

  • Rest the steak at room temperature after seasoning (approx 30-45mins)
  • Pat dry with a paper towel
  • Season with salt and black pepper
  • Rub in well
  • Oil in a cast-iron skillet on a medium-high heat
  • Crush and peel the garlic cloves
  • Cook the steak for 4 minutes, turning over every 1 minute 30 seconds
  • Medium cooked (60度,2成热)
  • Add butter, garlic and rosemary for 2 minutes
  • Baste the steak with the melted butter
  • Sear the fat
  • Leave to rest for 5 minutes
  • Season with salt and black pepper
